In 1880 the young ladies of the Trinity Church, Plattsburgh, published the cookbook Champlain Valley Book of Recipes with a Hermits recipe. Its a flavorful combination of cinnamon, allspice and nutmeg… Soft and chewy, and I’m making these today!
