Mary’s Kitchen Corner: Apple Nachos

Apple picking season! I pick more apples then I need! Finding the perfect apple is like finding gem, so I pick them all until I can’t carry the heavy bag of apples.  So I don’t waste any of these delicious Vermont candy – I find as many recipes as I can to enjoy the apples! The name alone “Apple NACHOS” grabbed my attention and I’m sure you can vary it.  I would LOVE to hear how you changed it up!!

Chocolate peanut butter powder or peanut butter

2 tbsp(s)

Or 2 tbsp of Peanut Butter (Almond Butter would be DELISH!)

3 tbsp(s), divided

Plain fat free Greek yogurt

2 tbsp(s)

1 tsp(s)

1 large, cored and very thinly sliced

Mini semisweet chocolate chips

1 tbsp(s)

  1. Combine peanut butter powder and 2 tablespoons water in a small bowl, stirring until smooth. Combine yogurt, honey, and remaining 1 tablespoon water in another small bowl, stirring until smooth.
  2. SLICE APPLES AND the  slices on a large plate. Drizzle with yogurt sauce, then peanut butter sauce. Sprinkle with chocolate chips.
  3. Serving size: ½ of nachos

To use this method to prevent apples from turning brown, create a water bath for your apple slices with a ratio of 1 tablespoon of lemon juice to 1 cup of water. Soak the apple slices for 3 to 5 minutes, then drain and rinse them. This simple step should keep your apples from browning for several hours.
